The Savagnin grape variety, specific to the Jura region, thrives in the hills of blue and grey
marls from the lias (Jurassic) and the earlier trias (Mesozoic) eras.
Harvested by hand, Vin Jaune, in order to reach its potential, needs maturing for 6 years without topping up, during which it will acquire its unique taste of walnut, under the effect of a skin of « flor yeast ».

'Jura is known for these rare wines called "Vin Jaune" made of 100% Savagnin grape variety. The wine is left in barrels for 60 months minimum, the wine is aged under flor which we call in french 'sous-voile'. Domaine Thomas is run by the ninth generation of the family. Jean and his wife Ginette own 13 hectares at Verdigny, mostly planted to Sauvignon blanc. Grown on a south facing slope, the fruit is hand picked lightly crushed, and basket pressed. The heaviest solids are briefly settled out by gravity, then the juice transferred to barriques awaiting the start of fermentation. This occurs naturally, when it is ready, and takes as long as it takes.

Inspired by the fine-boned, savoury Cru Beaujolais' made in Fleurie and Juliénas, Domenica's Beechworth Gamay is a beautiful expression of the variety. Gamay seems to be a natural fit for Beechworth's climate and soil, yielding an earthy, almost Pinot-esque note in the wine. This plays beautifully in Domenica's Gamay, tempering dark berry notes and sweet, woody spice with savoury elements and a fine tannin structure.
