Winemakers Notes "2023 was a wet and cold vintage. The cooler season provided the perfect opportunity to make a sparkling Riesling in the Traditional Method/Sekt style. Grapes picked on 5th April. Partially whole bunch pressed, light pressing, all free run juice. Fermented in old French puncheons and kept on gross lees for 3 months. 13 months on lees in bottle adds subtle complexity, the dosage of 4 g/L balances perfectly with the higher acid from the cooler season. Upper Yarra Valley Chardonnay (I10V5) from the excellent Bulong Vineyard (Yarra Junction), a gentle south facing slope grown on grey clay loam soils. Harvested in late February, fruit was gently pressed to tank to settle. Following a light racking, juice is naturally fermented in neutral French barriques. Rested on fine lees for 9 months with bâtonnage. MLF in some barrels. No additions beyond sulfur.

Made using fruit sourced from the highly esteemed Willowlake Vineyard in the cooler South-Eastern reaches of the Yarra Valley on red and grey volcanic soils.
The 2019 Pinot Noir was hand-picked in mid March. 30% whole bunch (kept as 100% whole bunch cab-mac for 2 weeks), with the balance destemmed to whole-berry. Naturally fermented with a total maceration time of approximately three weeks. Matured in French hogsheads for 9 months. Bottled in January 2020. Unfined and unfiltered. 194 dozen made.

Impenetrable black as night colour with a very deep dark purple black hue. Heady aromatics of ripe blackberries, liquorice and dark chocolate intermix with vanillin cedar, black plum and spice. Bold, richly textured flavours of succulent blackberries, liquorice and black plum flavours hit the palate with tremendous force completely saturating the mouth. The fruit for the Springflat comes from four sites; 60% of which comes from our northern vineyards, 40% from the south at Mia Mia. Producer Notes - "Once hand harvested with careful sorting in the vineyard, the bunches were partially crushed by foot and very gently pressed, directly to barriques. Bringing your nose to the glass and your olfactory is treated to caramel and vanilla layered on herbal and floral notes. The mouthfeel starts oily but finishes dry. On the palate you are treated to sweet caramel, vanilla, dusted in floral notes... finishing notes of oak and a lingering spiciness.

"This dry grown vineyard was planted in 1981 on old, red volcanic soils at 150m elevation. There are four separate parcels of Pinot Noir, two north facing blocks of MV6 and another of Abel, as well as a more sheltered south facing block of MV6. Now here's a Pinot that fits the Bill! The Cathedral is as effusive and charming as the man who made it, and while his more serious wines need time in the cellar, this one is destined to be drunk young and often. "A blend of fruit from the Matthews vineyard in Berrys Creeks and Guendulain Farm in Yarragon. Matthews was planted to MV6 on red volcanic soil in 1998 and has always been dry grown.
