Pioneers of organic and biodynamic winemaking, Emiliana is leading the charge on thoughtful winemaking in Chile. Their Adobe Pinot Noir is a particular favourite of ours, hitting that perfect sweet spot between juicy raspberries, fresh violet florals and aniseed spice. Overdelivering hugely for its modest price. A great pair with a rich braised dish.
Intense and bright yellow colour with golden reflections. On the nose it shows floral, citrusy and herbaceous notes over a yeasty and mineral base. The finish is bitter and clean with a long, nutty and refreshing aftertaste.

This is a red vermouth based on two sherry wines selected by its enologist Manuel Lozano. One is a sweet and velvety Pedro Ximenez and the other a dry and nutty Amontillado - aged separately in their own soleras for 10 years.

During refurbishments to the historic Calle Misericordia in Sanlúcar de Barrameda (home to the La Guita solera), a number of special vessels stood out due to their size and origins. The Paquet family domaine was created in 1980 with transition in 2016 to the 3 sons who began conversion to organics. Macon makes some of the most approachable, delicious Burgundies that do not require too much patience to enjoy. Expect lively, vibrant flavours of grapefruit, honeysuckle, acacia & white roses work well with salty starters (nuts, olives) but goes equally well poultry & risotto for example - a perfect all-rounder.
