The delightful Angela Martin and her husband, Andrew McCarthy, run the Castro Martin estate in Rias Baixas, on Spain's Galician coast, where production of Albarino at their bodega can be traced back to as far as 1887. Classic Albarino hallmarks show generously in this wine - a fragrant, opulent nose that is tempered by teeth-chattering acidity and saline texture.

It's a great mid-week wine you can slurp back over dinner, with softness on the palate and bright perfume to the nose. Sit with it and sip slowly however, and you'll see it unfurls dark savouriness, and an edgy bramble note.

Winery Notes - "Everton Hills vineyard is situated on the lower, warmer reaches of the Beechworth GI. At 282-metres, it grows solely nebbiolo which was purchased for the first time to make this wine. Handpicked, destemmed then wild-fermented in a large, concrete, open-top fermenter. Left on skins for 3-weeks in total. Pressed to a combination of seasoned Salavonian oak demi-muids and French oak puncheons and barriques for 9-months. Bottled under DIAM closure.

César farms his vineyards organically, with indigenous yeasts. The vines are all over 100 years old. He uses minimal new oak in the winery and whole bunches to varied extents with the Mencia. As is often the case in the area, the vineyards are co-planted with Alicante Bouschet and up to 12 other native grape varieties. The nephew of the aforementioned Raul Pérez, he comes from the family that has owned Castro Ventosa since 1752.

Organically grown vineyard in the Swan Valley, these are epic 70 year old vines on sandy/clay soil. Alex Cook has been growing here for over 50 years. The wine is lip-smacklingly dry, notes of apple, lime juice and a touch of tropical green melon that's balanced beautifully with a chalky texture, subtle saline and the natural acids from both bubbles and fruit.
