Winemakers Notes "2023 was a wet and cold vintage. The cooler season provided the perfect opportunity to make a sparkling Riesling in the Traditional Method/Sekt style. Grapes picked on 5th April. Partially whole bunch pressed, light pressing, all free run juice. Upper Yarra Valley Chardonnay (I10V5) from the excellent Bulong Vineyard (Yarra Junction), a gentle south facing slope grown on grey clay loam soils. Harvested in late February, fruit was gently pressed to tank to settle. Following a light racking, juice is naturally fermented in neutral French barriques. Made using fruit sourced from the highly esteemed Willowlake Vineyard in the cooler South-Eastern reaches of the Yarra Valley on red and grey volcanic soils.
The 2019 Pinot Noir was hand-picked in mid March. 30% whole bunch (kept as 100% whole bunch cab-mac for 2 weeks), with the balance destemmed to whole-berry. Naturally fermented with a total maceration time of approximately three weeks. Matured in French hogsheads for 9 months. Bottled in January 2020. Unfined and unfiltered. 194 dozen made.
