Shanteh Wale puts this at least as well as we could hope to... "Organically managed fruit from Mount Gambier. Two months on gross lees and two months on fine lees. Peach cheeks, cider apples and cumquat skin. Yellow guava, ginger candy and nutmeg. There is a cascade of acidity, graceful and sumptuous. Everything promised is delivered in truckloads on the palate, with the added notes of treacle tart, almond butter and lemon pith.
