The Don P.X. wines come from the youngest vintage wines from Toro Albalá. The carefully selected grapes are hand harvested from the oldest Pedro Ximénez and are then left to dehydrate under the sun for up to two weeks, concentrating the grapes' sugars. 100% Montepulciano from two estates in Ancona and Osimo within the small DOC of Rosso Conero. Following fermentation, half of the wine is matured in large old casks of 5000-8000l, the other in two and three year old barriques.
