"13% whole cluster, Native yeast. Hand harvested. We picked on two separate days. The first pick we destemmed the fruit and fermented in our square cement tank. The second pick was whole cluster fermented in stainless steel. After fermentation, both lots were pressed and matured separately. Always a native fermentation under this roof, this wild animal is only slightly tamed by its elegance and restraint. Fresh pine, oregano, cranberry, concentrated raspberries, violets, chamomile, and black peppercorn. The … more

95% Cabernet Sauvignon, 3% Petit Verdot, 2% Merlot.

"The Cabernet Sauvignon is a blend of three different clones from different parts of the vineyard. The fruit harvested in the early morning then was 100% destemmed and handsorted. Clone 337 was fermented in oak rotary fermenters, clone 191 was in open-top oak barrels, and the See clone was fermented in an open top stainless-steel tank. The wine spent an average of 30 days on skins before being gently … more

"The fruit was hand harvested on two dates to allow for more ripeness and complexity. Both lots were destemmed and fermented in stainless-steel vats and a new puncheon barrel. After three weeks on the skins, the wine was pressed to French oak (50% new) where it matured for 20 months until it was racked and bottled. 2019 was a super aromatic year. It shows in this wine especially. Fresh mint, smoky … more

Winery Notes "2018 was another strong Semillon vintage in the Hunter Valley. Dry, warm conditions that were similar to 2003 meant cropping levels were much smaller than average and produced wines with robust flavours and softer acids. The grapes were handpicked and sorted in the vineyard. Once arriving at the winery, the fruit was very lightly crushed and pressed with a small percentage of stalks. After a relatively cool fermentation, the wine spent a minimal time on yeast lees before … more

This chardonnay from the hunter valley in NSW displays key varietals and the uniqueness of the region. Medium bodied, think white peach, chamomile and green melon. This chardonnay spends 9 months in both new and older oak with yeast lees giving the palate a more rounded texture and complexity.

Sourced from a small selection of our favourite shiraz blocks, the grapes were both hand and machine picked before fermentation in the traditional open top vats. The wine was then matured in older, large format French oak casks. These 2,700 litre casks highlight the fruit purity whilst making sure that oak isn’t the dominant character.

Vintage 2018 was another strong Semillon vintage in the Hunter Valley. Dry, warm conditions that were similar to 2003 meant cropping levels were much smaller than average and produced wines with robust flavours and softer acids. Vat 1 Semillon only ever comes from the oldest and best blocks. The vines are all dry grown, on their own roots, and date back to 1923.
Producer Notes "Delicate citrus aromas. The palate has a density and depth of fruit which only comes … more

A great balanced between fruit acid and oak hints at the quality of the wine and the vintage. The wine has the typical seamless Vat 47 palate with great fruit length and a clean acid finish.
Entirely hand picked with a proportion also being basket pressed. After cold settling the juice was partially fermented in stianless steel before being transferred into new, one and two year old French oak barriques where it was matured on yeast lees for 6 months … more

We are quite partial to this Montepulciano d'Abruzzo, an ultra-fun opportunity to break out of a rut if you're a die-hard Pinot Noir drinker. Bright fruited with lively acidity, one whiff of this and you'll be transported seaside with a campari spritz and a bowl of fresh tomatoes, buffalo mozzerella and basil. Dreamy!

We take our limoncello (not lemoncello) a tad seriously. Made from a safely guarded recipe - two different types of lemons from south australia's oldest citrus plantation in lennane orchards, montacute valley, adelaide hills. This citrus orchard is believed to be planted 150 years ago.The lemons are what one might call "Ugly". Yes, they are different sizes and kind of weird-looking. Unfortunately, that meant that supermarkets did not want to buy them. To help preserve this historic orchard, applewood distillery … more
