Super deep and complex, rich and saline, with a pure developed perfume. Mapled acorn-rich, lightly glyceric, deeply spiced, strong at the rim, releasing to an athereal boof from a structural base. Fine glazed toffee nut, orange blossom, sunflower and pumpkin seeds, dried chestnut honey, toasted hazelnuts, delicate tangerine caramel, brandied citrus, sandalwood. The acidity itself is incredibly complex, carrying brine and rind, fine old wheat and praline in a gloriously patinated, running mouthfeel. Finish = forever!

Valdespino Yellow Label Pedro Ximenez
Valdespino is one of the oldest and most traditional Sherry houses. They still ferment a large proportion of their wines in wood, giving their wines added depth and complexity.

Moscatel Toneles is one of the legendary wines of the sherry region, produced by Valdespino.

Valdespino El Candado Pedro Ximenez

Sanchez Ayala are an undiscovered treat here in Australia. Much used by the Navazos project, this bodega makes some wonderful Sherries, of which this is a terrific starting point.
This is superb value.
Classic flor notes dominate the aromatics, but don't overpower the wine - there are still nuances of fresh bread, almond and saline notes. The palate is quite delicate but wonderfully fresh with excellent racy, salty flor-driven Manzanilla character.

This sherry is produced by an Almacanista, a small producer whose skills are handed down from generation to generation. It is then marketed by a large company such as Lustau.
