Sanchez Ayala are an undiscovered treat here in Australia. Much used by the Navazos project, this bodega makes some wonderful Sherries, of which this is a terrific starting point.
This is superb value.
Classic flor notes dominate the aromatics, but don't overpower the wine - there are still nuances of fresh bread, almond and saline notes. The palate is quite delicate but wonderfully fresh with excellent racy, salty flor-driven Manzanilla character.

Dry, nutty start. Hazelnuts, brazil nuts. Umami notes of beef stock and dried mushrooms. On the other end of this earthy, darker side there is a brightness of bitter oranges and fresh figs. A bit of toffee and echoes of spices (not unlike gingerbread, really nice).

This brandy is aged in Oloroso Casks for 15 years
'Has a Copper colour and intense notes of sweet sherry, rich fruit with a touch of vanilla
and very elegant. Mahogany in colour with fine toasted aromas; it is complex and clean,
with tobacco and notes of wood, nuts and figs. On the palate it is broad, very balanced,
with sweet sherry notes, rich fruit with a touch of vanilla and great persistence.'

"'Hacienda de Doña Francisca' is a specific small vineyard within Pago Callejuela, on the estuary side of Sanlúcar. The Albariza here is Tosca cerrada. The fruit is picked at full maturity, which only plays out to 12% abv due to the cool site and poniente breezes. With an average age of 15 years, Cardenal Mendoza is one of the most famed (and popular) brandies in Spain. It's a ripe, smooth, sweet-spiced style. Lashings of xmas pudding (from maturation in old PX and Olorosso barrels). Good length and finish from such a generous style.
Winery Notes - "This comes from the solera of manzanilla Zuleta. This wine begins as Manzanilla and therefore has a biological aging in a first phase, but after losing the characteristic layer of flor yeast it undergoes an oxidative stage. 100% Palomino variety, with about 8 or 9 years of aging in American oak casks, using the traditional Criaderas & Solera system.
