This spirit is literally the 'Taste of Australia'.
It's an Amaro - a type of bitter/herbal aperitif that have been popular for more than a century - famous for it's use in the Negroni or Spritz. We like to take an Australian-spin on things - and dry aperitifs seem to epitomise a renaissance in contemporary Australian drinking.

The 2020 tirage of DAOSA Natural Réserve is the fifth release of this wine.
This wine is a Pinot Noir and Chardonnay blend, made following the principles of our Method ClassicTM. The wine shows classic Pinot Noir characters with subtle strawberry notes and ripe Chardonnay fruit on the middle palate, tempered by a fine bead and a beautiful complexity and length from the Réserve wines. A classic example of Australian sparkling wine, made in the traditional method.

A superb sparkling from the Adelaide Hills winery. This 50% / 40% / 10% Chardonnay Pinot Noir Pinot Meunier blend has spent at least 24 months on lees developing great complexity and flavour.

This wine can't seem to stop winning awards! The best Gruner Veltliner outside of Austria in 2013, and more recently the best Australian Gruner in 2021. We're inclined to agree with the accolades though, as will you be after one whiff of this savoury and enticing wine. Think white necatarines, fresh ginger, lemon juice and wet slate.

Hills Collide is the brainchild of two long-time friends, Shane Ettridge and Michael Fitzpatrick. Starting with a plot of Nebbiolo in the Adelaide Hills, they've grown their portfolio considerably. Their Riesling/ Grüner blend is zesty and aromatic, think kaffir lime leaves and pink lady apple skin, and plenty of flesh and salinity.

From the Brackenwood Vineyard, Hope Forest, Adelaide Hills .This Barbera is grown by the Nagel family on their cool Brackenwood vineyard, at almost the southern most point of the Adelaide Hills. Fresh salmon-rose hue, with notes of strawberry and vanilla. Drawing you in with a fine persistent bead and smooth palate, then finishing crisp and dry - leaving lingering flavours of rose petal and cream.

From vines with an average age of 20-plus years, the fruit selection here can change from year to year, yet the quality never wavers. The 2021 was predominantly sourced from the Piccadilly Valley. Fermentation was in small batches in open fermenters and a touch less whole-bunch was included this year (25%). Maturation took place in both puncheons and barriques for 10 months (approximately 15% new).

Adelaide Hills is becoming a hot spot for grüner veltliner of late. A greener, more refreshingly pithy alternate to Riesling, this variety flourishes in the cooling hills.
