Pillot’s Aligoté is drawn from 1.5 hectares of Estate-owned vines in Chassagne and the nearby Côte Chalonnaise. The grapes were crushed and pressed before a natural fermentation. This cuvée then aged on its lees (with no stirring) in stainless-steel tanks and older oak barrels. Burgundy’s top growers continue to show us what the Aligoté grape is capable of in the right hands, and this is a great example of that trend.
"Thierry Pillot’s Aligoté starts full and becomes leaner, crisp and cheerful on the palate but still on the leaner side with strong citrus and grapefruit. Drink from 2025-2027." 87-88 points, Jasper Morris MW, Inside Burgundy
