Crawford River Cabernet Sauvignon 2018

Producer Notes - "Lovely black, lifted fruits and underlying earthy tones define the introduction to this wine. The palate is plush, supple and dense. There is spice - think liquorice and allspice - with blackcurrant, dark chocolate and a hint of bay. The fine, powdery tannins and seamlessly integrated acidity help define and elongate this superb example of Crawford River Cabernet.

100% hand-picked fruit is carefully selected in the vineyard. At the winery, it is destemmed without crushing and the fruit is cold soaked for 5-7 on skins prior to natural fermentation in open fermenters. Each fermentation is hand plunged throughout a moderate temperature fermentation. It is then pressed when dry and settled in tank for around 4 weeks before barrelling down. 24 months in 100% French Oak, 20% new. No acid addition. Not cold stabilised. Not fined. Bottled October 2020. "
