In Australia, the term sherry is off limits, so our version of the classic style is known as Apera. It's based on the 'fino' style of light dry sherry, which is made in Jerez and surrounds using the Palomino variety. Eight years on lees, this Champagne draws on vineyards in the crus of Les Mesnil, Avize, Averney and Ay for a toasty and chalky experience. Fruit characters of apricot and white peach, jasmine tea, perhaps some apple and pear in there too - we'll see as these characters unfold and develop over the next 20 or so years. Wonderful now but will reward patience.

The fruit for the Rosé comes from the top villages of Riceys, Abonnay and Aÿ, with the delicate colour obtained from a short skin contact with the Pinot Noir element in the blend. 20% of the blend is made up of old reserve wines, which are up to 10 years of age.
