In Australia, the term sherry is off limits, so our version of the classic style is known as Apera. It's based on the 'fino' style of light dry sherry, which is made in Jerez and surrounds using the Palomino variety. What starts as a light, crisp white wine is then fortified (i.e., it's alcohol level is boosted with the addition of a spirit) before ageing under what's called a 'veil' of flor yeast, which carpets the surface of the wine in barrel.
The resulting wine is crisp and tangy, with a salty, nutty, floral character. It's best drunk chilled but not ice cold!
