Winemakers Notes - Chardonnay is the number one white variety in the Yarra Valley.
Year in and year out our soils produce wines that are both attractive when young and incredibly complex when carefully cellared for over 10 years. We personally believe that Chardonnay should have real flavour without being overly lean or acidic. We strive for subtle fruit weight and texture without one aromatic or structural element dominating the wine.

'We call this wine Pinot Grigio because it’s dry with an acid backbone and a savoury, moreish character.
It exhibits red apple and brown pear, rose and spicy cinnamon aromas with a hint of bread crust goodness. The palate is dry, savoury and textural with preserved lemon rind, fennel and pear flavours.' Wine Maker Note

"It's grown at about 300 metres above sea level on vines that are now nearly ten years old. It now comes in a proprietary 'King Valley' prosecco bottle, which is lovely to see - a real sign of confidence/harmony for the region. Reckon they are bang on with this release. Winery Notes - "Pétillant Naturel aka pet nat for short, is an old school method of making sparkling wine. Even older than the traditional Champagne method!
How it works - Our Chardonnay begins its ferment process in tank and when it is half way through we bottle it and the wine finishes its ferment in bottle, trapping the CO2 inside and forming bubbles.

From Chris Catlow - quickly becoming one of Beechworth's rising stars.
Aligoté is not so run of the mill variety wise, but think crunchy fresh Chardonnay with a lick of Arneis. It's native to Burgundy, but performs very well in the single vineyard in King valley. Chris has given it some depth and texture, while maintaining the fine herbal/savoury mineral note that great Aligote shows.

"Grafted three winters ago from cuttings taken in the Mornington Peninsula. Grown in the deep volcanic soils of Whitfield in the King Valley.
