The Assemblage is a composite blend of vineyards from across the Mornington Peninsula. The Assemblage is matured a vast French oak barrel called a Foudre. Holding nearly 3000 litres and with very thick staves, the wine matures slower than in smaller barrels and with less oxygen ingress. Minerals, pear and rose petal floral aromas make this a very intense and pretty wine on the nose, with a long, focused line of acidity shaping the palate and a smidge of residual sugar building palate texture rather than sweetness.

Sourced from the Merricks Grove vineyard, the fruit for this wine was hand sorted twice and produced in two ways; one fermenter of whole berries and another of 100% whole bunches. The Hickson Vineyard consists of two acres of Chardonnay planted by the Hickson family in 1982. One of a sprinkling of vineyards preluding the rise of the Mornington Peninsula. A heritage site lovingly restored in 2013 by Kerri Greens.
The Hickson site is managed without herbicide, systemic fungicides or insecticides. Irrigation is not used on this dryland site.
