'The 2021 blend consists of 30-40% Merlot and Cabernet Franc, a touch of Malbec, Petit Verdot and Carménère, with the remaining Cabernet Sauvignon. A low crop level is important to ensure the fruit ripens and achieves maximum flavour. The wine was fermented for 4 weeks on skins before pressing. Natural yeast is used throughout. "This wine comprises 80% Sauvignon Blanc and 20% Semillon. Most of the Sauvignon Blanc fruit had 4 hours skin contact prior to pressing. The Semillon component is crushed and pressed immediately after picking. This wine was 100% barrel fermented with predominantly larger barrels used. All went through natural yeast fermentation and malo-lactic fermentation. The extended lees contact helps fill out the middle palate and gives this wine the extra dimension it is known for.
