2019 is 58% Cabernet, 20% Merlot, 9% Cab Franc, 8% Petit Verdot & 5% Malbec.
"Cuvée de Chais" loosely translates as Cellar Blend and is Adrian’s interpretation of a traditional Bordeaux blend or ‘Claret’.
Adrian believes that when it comes to Bordeaux varieties, the sum is greater than its parts. Cabernet Sauvignon provides the tannin, length and structural backbone, Merlot contributes ‘the fuzzy ball of fruit’ in the mid-palate, Cabernet Franc red fruits and savouriness, Petit Verdot adds perfume and … more

Campari-like fruit notes tending into a dark plum - very attractive aromas. A slightly deeper colour than prior vintage. The palate starts out bolder with dark red fruits and sweet edges from the French oak used. Lovely ripe tannins and a good acid backbone carries the flavours right to the finish. The lingering after taste makes for a very enjoyable Pinot Noir.

A vibrant colour with a touch more than usual due to the sunshine. Lovely florals and lemon grass aromas. Mouth filling flavours of pear and lemon pith balancing the zesty acid backbone. The aromas and fruit weight belie the 10.8% alcohol and reconfirms that the Hunter Valley produces fruit at optimal ripeness at much lower sugar levels. A classic Hunter Valley Semillon to enjoy now or will age gracefully over many years.

Winery Notes - "Nebbiolo sourced from Pete Graham's Domenica Vineyard high on the granitic soils of Beechworth.
A serious red for serious red drinkers, Nebbiolo is often referred to as the king of wines and in our stable it only takes second place to its queen - the Company Chardonnay. Lot's of tannin, acid and good fruit purity showing great potential for ageing. Inspired by Italian winemaking greats, this Nebbiolo has spent 18 months in aged small format oak barriques."

Grown on a south facing slope, the fruit is hand picked lightly crushed, and basket pressed. The heaviest solids are briefly settled out by gravity, then the juice transferred to barriques awaiting the start of fermentation. This occurs naturally, when it is ready, and takes as long as it takes.
Well balanced fruit will contain everything required to ferment to dryness. Naturally formed sulphides occur in some barrels - usually to a point which produces the beautiful nutty, matchstick characters … more

This vintage's rosé is made from Sangiovese and Aglianico, and it shows on the nose. Lifted scents of red cherry and campari leap out of you, while the palate is as refreshing as you could hope for. Pour yourself a glass and be transported to the seaside, with a campari spritz in one hand and a good book in the other.

Always a favourite here at the Cellars, the 2021 Sangiovese is a little different though nonetheless bloody delicious. Owing to pervasive smoke taint, Fighting Gully Road sourced fruit from elsewhere around Victoria. The Sangiovese comes from Mornington, and exemplifies the vibrant alter-ego of Sangiovese. The nose is more lifted and perfumed, giving us the pretty high toned aromatics that Sangiovese is capable of. The tannins are delicately prickly, as the palate floods with cranberry tartness and fine minerality.

As close to the Ribeira Del Duero as you can get without flying to Spain. Some clever winemaking and viticulture has preserved the varietal character of Tempranillo. Extra resting time has allowed the powdery tannins and earthiness to soften, and the result is an Aussie Temp that will convert even the hardiest Spanish vino fans.

Excellent value Chardonnay from Beechworth that drinks like a wine worth at least twice the price. A little time in oak and on lees gives it a good frame, filled in nicely with quality fruit character and natural acidity. Scents of fresh figs, apricot and matchstick unfurl from each glass. Delicious!
