César farms his vineyards organically, with indigenous yeasts. The vines are all over 100 years old. He uses minimal new oak in the winery and whole bunches to varied extents with the Mencia. As is often the case in the area, the vineyards are co-planted with Alicante Bouschet and up to 12 other native grape varieties.
