Crawford River Cabernet Sauvignon 2012

This wine displays a fabulous amalgam of bright black and red fruits. Cassia bark and liquorice notes are seen as the first aromas and carry on throughout the palate, together with dark chocolate and spice elements. Subtle oak sits together with firm, fine tannin and more spice, which combine to create a layered, complex palate.

"As usual, each individual block was separately picked and fermented in open fermenters. De-stemmed only. 5-7 day cold soak was carried out prior to fermentation with neutral yeast. The wines were then pressed to tank and settled prior to being racked to barrel. No additions. Not stabilised or fined. 2 years in French Oak.
