Patrick Sullivan Waterskin 2018
This is a blend of Semillon and Sauvignon Blanc. It's named after the leather water pouch that was used in the middle ages. The wine is made to nourish. Semillon is 50% of the blend. Picked and pressed straight to old barriques. The Sauvignon Blanc spends 1 month on skins, as whole bunch. The wine swims. Its saline and bright and tastes of the ocean breeze. Aromatic and crunchy, quite a complex creature. Bright fruit and punchy but very savoury. Great balance.
