Equipo Navazos La Bota de Pedro Ximenez 'Casa del Inca' 2015

Pérez Barquero, D.O. Montilla-Moriles. A limited release of 3,000 bottles (for the world), this P.X. is a nod to the past when Pedro Ximénez was often a vintage wine and released young without extended ageing, nor the resulting rancio characters that such maturation brings. This wine comes from late-harvested P.X. grapes from one of Montilla's best vineyards. Fortification is carried out only with top-quality, wine-based spirits. After 18 months resting in the traditional, large, cone-shaped 'amphora' of the type used in Montilla-Moriles for centuries (more accurately called tinajas or conos), the wine is ready for release as an ultra-pure, viscous, incredibly intense and naturally sweet dessert wine. For those who have worked with the previous bottlings, this is a very similar wine. For those new to this wine, this isn't your opaque, black, rancio style of P.X. Instead, you can expect a bright, perfumed, amber/brown coloured wine of wonderful vibrancy, freshness and intensity with dried fruits, leatherwood honey, cold tea, nutmeg, molasses and fresh resin notes. It is still very sweet of course (with 415 grams per litre of natural sugar!) yet there is also a very racy acidity. The wine can be utilised in exactly the same way as an aged P.X.; served with coffee, tea or with chocolatey desserts.

"The young and sweet 2015 Pedro Ximénez Casa del Inca from Montilla-Moriles is unoaked, matured in concrete vats that are traditional in the region, and wants to show the character of the sun-dried fruit. It's bottled with 15% alcohol, as the must is fortified, first to 12% and later to 15%, and with some 415 grams of residual sugar. It's very sweet with aromas of molasses, honey and maple syrup, with a dense palate, great concentration and lowish acidity." 90 points, Luis Gutiérrez, WA #234
