Domaine Gueguen Chablis AC 2020 375ml
You will find Domaine Guegen in Auxerrois, to the east of central Chablis. Though not yet certified organic, they have not used herbicides or pesticides since 2015 and are anticipating their certification this year (2023), as well as having already achieved the Highest Environmental Value Certification. This hard work pays off in the vineyard, their Chablis and Aligoté sparkle and sing in every glass, glistening like dew. Winemaking is restrained, largely using steel tanks to preserve the vibrancy and freshness.

The 821 is 100% handpicked Chardonnay grown in the Chablis region, made method ancestrale - aka petillant naturel. They've named it 821 as a nod to the number of days from the flowering to bottle leaving their cellars as a finished (and delicious) wine.
